Ohmygoodness y’all, this tart though! It’s like a quiche, only better. You get more bacon and a flakier crust- that’s a win-win. And it’s delicious for all the meals and is wonderful reheated. I kind of want to stockpile this tart in my home so it’s always there. Plus, it has a veggie in it so it’s healthy.

I have always loved all things French- the art, the architecture, the language, and of course, the food. People who use butter as a main ingredient and cream instead of milk are people after my own heart. One day I’m going to live in a little cottage in the French countryside and y’all are all invited to come visit me. We can read books, bike to the farmer’s market, and eat pastries all day. I’m pretty sure that is what heaven is like.

The key to the tart dough is to let it chill- that is what gives it the layers and crispiness. It should chill for about three hours right after you make it- then once you roll it out and put it in the pan, it should chill for another hour, and go from the fridge directly into the oven. Other than that this dough is the easiest thing in the world to make. And, if you’ve never worked with leeks before don’t worry. The trick with leeks is to rinse them really well because dirt gets trapped in the rings. Once rinsed, cut off the dark green leaves and the roots, using only the white and light green part and rinse them again.

Ingredients
  1. 1 1/4 c. flour
  2. 1/2 t. salt
  3. 6 T. cold butter
  4. 1 egg, beaten
  5. 1 T. ice water
  6. 6 slices bacon
  7. 2 leeks, sliced
  8. 2/3 c. heavy cream
  9. 1 egg
  10. 1 egg yolk
  11. 1 t. nutmeg
  12. 1 c. cheese
Instructions
  1. Lightly pulse flour and salt together in a food processor. Add butter, 2 T. at a time and pulse until mixture is crumbly. In a small bowl or glass, stir egg and ice water together. Add to flour mixture in 2 additions, and pulse until mixture forms a ball. Wrap in plastic wrap and chill for 3 hours.
  2. Remove dough from the fridge and place onto floured surface. Roll out and put into tart pan (or pie pan); prick with a fork and return to fridge to chill for 1 hour. Preheat oven to 400, remove crust and bake, covered with buttered foil for 20 minutes. Uncover and bake for 4 more minutes.
  3. Meanwhile, crisp bacon. Crumble and set aside. Saute the leeks in the bacon grease until soft and translucent. Once crust is done baking, put leeks in the shell. Top with bacon. In a small bowl, whisk together heavy cream and next 3 ingredients. Pour on top of bacon-leek mixture. Top with cheese and return to 400 degree oven for 25-30 more minutes. Remove and enjoy!
