Banana Blueberry Bread Pudding
y’all let’s get the weekend started today. like today today. because i know its been a long week for you. i empathize. i sympathize. and that, awesome friend, is why i baked you this. bread pudding. gooey and spicy-sweet, – with just enough tropical flavors to make you reminisce about warmer days. it’s the perfect dessert to bake this weekend while snuggling in your
hot pink flannel onesie cute yoga pants with the fire roaring and listening to ella fitzgerald (her songs are essential to the baking process- i’m not even joking though).
there is something so cozy and comforting to me about bread pudding. its not my favorite dessert or go-to dessert for company – it seems more casual and homey than fancy-pantsy. but, i do love the chewy moist interior and crunchy, sugary top. its the perfect dessert to have after a big family-style dinner to help ease you into a food coma for the rest of the evening.
plus- i made this recipe healthy…in that i used half the sugar i normally do because the bananas really sweeten it up. i’m not sure when fruit started getting such a bad rap, i suspect it was around the time atkins and the south beach diet came along, but it seems that half the people i meet are convinced fruit is the enemy because it’s loaded with sugar (the horror!). once i overheard a woman in the gym locker room asking a nutritionist if her mother was struggling to lose weight because she ate 1/2 cup of grapes every day. ummmm…what?
so i would like to now present a defense for the amazingness of fruit, here goes: 1.) the sugar in fruit is not the same as white/brown sugar in cakes and cookies. your body metabolizes it differently (and that, ladies and gentlemen, was my one and only scientific argument). 2.) sugar is delicious. and no, i’m not addicted. i can stop any time i want to. i’m just not ready to yet. 3.) and finally, and this is the strongest argument yet, you can do wonderful things with fruit, like bake them into bread puddings. i rest my case. although i’m guessing that people wanting a recipe for bread pudding may not be the same peeps who are freaking out about the sugar in fruit, but still- spread the word y’all.
i highly recommend using homemade bread to make the pudding- it tastes so much better than store-bought sandwich bread. but if making bread isn’t your thing (no judgement y’all) then splurge and buy some bakery bread at the grocery store. and by ‘splurge’ i mean spend $1 at wal-mart. you’ll be glad you did.
- 2 bananas, sliced
- 1 T. brown sugar
- 1 loaf of day-old bread, cubed
- 4 beaten eggs
- 1 c. cream
- 1 c. milk
- 1/2 c. brown sugar
- 1 T. vanilla
- 3 t. cinnamon
- 1 t. ginger
- 1 pckg Aldi's dried cranberries (blueberry flavored)
- Preheat oven to 350.
- Spray a baking dish with pam or coat it with butter. Put sliced bananas on the bottom of the pan- sprinkle with brown sugar. Top with cubed bread.
- Whisk together eggs and next 6 ingredients. Pour over bread cubes. Sprinkle with dried "blueberries" and bake at 350 for 40 to 45 minutes.
- This bread pudding is so sweet and delicious it does not need any sauce- enjoy!
