Fruity Kale Salad
y’all. i did something unprecedented yesterday. i ate a salad for lunch. true story. i’m not much for salads-as-a-meal (unless its a taco salad!), it makes me feel like a rabbit. but…if meal salads taste anything like this kale salad, i’m hooked. and you’re gonna be too- because this salad has silky yummy kale, toasted walnuts, crisp apples, juicy oranges, zingy cranberries, annnnd cojita cheese. stick with me y’all- you’re gonna be glad you did.
yesterday i spent about 3 hours (no joke) fluffing our Christmas tree. it was so tedious and also a little painful but i survived. then i decided that i wanted us to have some Christmas cookies to eat while decorating it. as newly-weds we are still trying to find our holiday tradition groove- trying to balance compromise and creating new traditions. so i think snacking on Christmas cookies while decorating the tree is going to be one of the new traditions that we are incorporating because it was so fun.
by the time i was done preparing the tree and baking the cookies i realized it was 2:30 and i still hadn’t eaten lunch. and despite my love for all things unhealthy, Thanksgiving weekend really left me craving something leafy and green. while we were in Texas we consumed a huge tin of homemade chex mix (my fave!), pies, cookies, cakes, chili, turkey, dressing, mashed potatoes, rolls, bar-b-q sandwiches, and i even snuck a couple of green beans in there…you know to keep it healthy. maybe you can relate?
if so, i highly recommend this salad. it’s the perfect lunch to throw together during the holiday season where, if you’re anything like me, you are highly likely to get so caught up in what you’re doing that you forget to eat lunch. until you are hangry. plus the dressing will keep in the fridge for a couple of days, so you can be ready to throw together this power-salad at a moment’s notice and feel good about the choices you are making. until you cram 20 cookies into your mouth while decorating the tree. but whatevs- the salad cancels out the cookies.
- 4 T. EVOO
- 4 T. apple cider vinegar
- 2 T. honey
- 2 t. brown sugar
- 1 t. yellow mustard
- salt and pepper to taste
- 4 c. kale
- 2 t. EVOO
- 4 T. dried cranberries
- 2 apples, diced
- 2 oranges, peeled and segmented
- 1 c. walnuts, chopped and toasted
- 4 T. cojita cheese, crumbled
- In a jar combine 4 T. EVOO and next 5 ingredients. Shake well and set aside.
- Put kale in a large bowl and cover with 2 t. EVOO. Sprinkle with salt and massage for 5-8 minutes, until kale leaves are soft and silky. Combine remaining ingredients and toss with dressing. Enjoy!
