Chocolate Gingerbread Men

happy Thursday! you have almost made it through the week and that is worth celebrating- with cookies (i mean otherwise it’s not a celebration, right?). chocolate gingerbread men to be more specific because Christmas is almost here and once we cross over into December 26th i’m not sure we can make things gingerbread flavored again until after Thanksgiving of 2017 (how did we end up on the verge of 2017??). it will be rough. but these guys will be there to help you get through it all.

i made these little guys for Lane and i to snack on while we decorated our tree this year and they were delicious. just the right amount of crispy and chewy – plus they were tiny so you can eat like a 100 and not feel guilty. not that i did that. because that would be too much…

i love these little men (and women). i got the cookie cutters from a little child’s bake set that my mom gave me for Christmas way back when and i have held on to it through the years. in the set there is a tiny rolling pin, a little cookie pan, two mini tart pans, and these adorable man and lady cookie cutters. i knew that they would be perfect to make all my gingerbread dreams come true this year.

and now that Christmas is almost here (what the heck?) you have just enough time to whip up a batch of these guys and set them out on Christmas Eve for the family to enjoy. obviously you can cut them into any shape you want, but they taste best when cut into tiny gingerbread peeps (we did taste tests, trust us!).

  1. 1 c. sugar
  2. 1/2 c. butter
  3. 1 1/2 t. vanilla
  4. 2 c. flour
  5. 1/2 c. cocoa
  6. 1 t. baking powder
  7. 2 t. cinnamon
  8. 1/2 t. ginger
  1. Beat butter and sugar together until creamy. Beat in egg and vanilla. In a separate bowl combine dry ingredients with a whisk. Stir into sugar/butter mixture in 4 additions, stirring until just combined.
  2. Wrap dough in plastic wrap and chill 3 hours. Remove from fridge and divide into 3 parts. While working with one part, put the other 2 back into the fridge.
  3. Roll dough out to 1/2 in. thickness and cut with cookie cutters. Place on cookie sheet and bake at 350 for 10 to 12 minutes. Enjoy!
