Cherry Chocolate Chunk Cookies

remember how yesterday i said it was time to switch to salad ’cause of all the sugar we all consumed this past weekend? yeah…me neither. i know the holidays are a time when we all go crazy making cookies, and you’re probably a little cookied-out (is that even a thing?), but trust me, you will want to break out the butter and sugar for one more batch.

these cherry chocolate chunk cookies have everything you could ever want in a cookie. chewy inside, crispy outside, and of course the timeless combination of cherries and chocolate. even if you just can’t bear the thought of another cookie right now…Valentine’s Day is going to be here pretty soon…i’m just sayin’. actually, after i made these i think i only got to eat 2 of them because my darling husband whom i love ate the rest. no joke. and he normally doesn’t even like cherries.

ever since we met i have been on a secret mission to transform the foods he doesn’t like in order to get him to eat them. to be fair, he is not at all a picky eater and his list of won’t-eat-foods is pretty short: maraschino cherries (that’s totally fine with me because then i get to eat them all off his sundaes and milkshakes), beets, poached eggs, and pimientos. so far i have gotten him to enjoy beets and now these cherry cookies.

next i might have to just combine all his worst fears into one delicious, obnoxious recipe and make cherry beet cookies or something. i can’t be stopped y’all (don’t worry, i won’t be putting pimientos in cookies in the foreseeable future). and i would say feel bad for my hubby but honestly, he knew what he was getting into when he proposed and went through with it anyway. he’s a little crazy like that but i love him anyway.

  1. 1/2 c. butter, softened
  2. 1 c. brown sugar
  3. 1 egg
  4. 1 t. vanilla
  5. 1/2 t. salt
  6. 1 t. baking powder
  7. 2 c. flour
  8. 1 can cherries, drained and chopped
  9. 1 c. chocolate chunks
  1. Preheat oven to 375. In a large bowl cream together butter and sugar. Add egg and beat until combined. Add vanilla and mix well. Set aside.
  2. In a medium bowl whisk together salt, baking powder, and flour. Stir into butter mixture until just mixed together. Stir in cherries and chocolate chunks. Grease cookie sheets and drop cookies by tablespoon-fulls.
  3. Bake in oven 10-12 minutes. Allow them to cool and enjoy (and maybe hide a few from your family for just you...).

    These are the best cookies i have ever had! And im not just saying this because Kathryn is my wife. I can honestly say these cookies are my favorite and are now my go to request!
