And my sister, who isn’t crazy about avocados (I know, it’s weird), even likes this margarita. Although that may have more to do with the fact that it has tequila than anything else, but we’re not here to judge. We’re just here to drink margs and eat guac and enjoy the bliss that is Saturday.
Lane and I don’t usually get too crazy on the weekends. Today we are going to go see The Magnificent Seven (I know, it’s been out in theaters for-ev-er) and we usually do a movie night or something Friday night. Somehow, for the past few movie nights I have
convinced coerced him into agreeing that it is my turn to pick the movie. Never underestimate my powers of persuasion. Or my ability to talk until I wear the other person down…
Ugh and we gotta clean today. I don’t know when it happened but one Saturday I woke-up and started adulting and never looked back. I was running errands, cleaning the house, and even doing laundry. I remember when I was little girl wondering how adults could enjoy running errands all the time, and now I know. You don’t enjoy it, it just creeps up on you once you turn 25 and all of sudden you’re that chick who says, “Oh I would love to meet you at the pool but I have a ton of errands to run. Maybe 3 years from now when I’m free?”.
But cleaning and laundry and even errands (provided you are NOT the driver) can all be transformed into semi-fun when you mix in this margarita. It’s as simple as breaking out the tequila, making some simple syrup, and blending in some avocado. And the best news? Simple syrup can last in your fridge for up to 1 month, so you can just make up a big batch of that stuff and keep it around for these margs and Beeritas and any other drink your little heart desires (side note: when I went to search how long simple syrup will keep in your fridge, the suggested search term was “how long does a simple assault stay on your record” and I had to wonder, what is a “simple” assault?).

1 c. water
1 c. sugar
1 avocado, mashed
2 c. pineapple juice
1 c. lime juice
4 oz. Cointreau
5 oz. tequila
Lime wedges for garnish, optional
2 T. salt, optional
In a small saucepan combine water and sugar and heat over medium-high heat, stirring occasionally about 8 to 10 minutes or until sugar is dissolved. Remove from heat and cool. Once simple syrup is cooled combine all ingredients (except lime wedges and salt) in a blender and blend until smooth. Set aside.
Using a lime wedge, wet the rim of 4 glasses. Pour salt on to a plate and roll the rims of the glasses in the salt to coat. Fill with ice and pour in the margarita. Serve with additional lime wedges for garnish and enjoy!
Simple syrup can be made in a larger quantity with a 1:1 ratio (1 c. of sugar for every 1 c. of water) and stored in the fridge for up to 1 month.
